Taliouine is known around the world for one precious ingredient: saffron.
In the surrounding mountains, at the foot of Jbel Siroua, families cultivate the purple crocus whose red threads become one of the most valuable spices on earth.
The Saffron Harvest
In autumn, the fields bloom for only a few weeks.
At dawn, before the flowers fully open, families pick them by hand. The delicate stigmas are then separated one by one and carefully dried.
It takes tens of thousands of flowers to produce a single kilogram of saffron.
A Village of Patience
Taliouine is also home to an old kasbah and to cooperatives where visitors can learn about saffron and its many uses in Moroccan cooking.
Here, patience is not just a virtue.
It is the secret of the harvest.
